Cold Cucumber-Yogurt Soup
1. 2 tablespoons fresh dill, tough stems removed
2. 4 cups peeled, seeded, and coarsely chopped cucumbers
3. 2 cups unflavored yogurt
4. 1 tablespoon garlic oil
5. 1 tablespoon honey
Makes 4 servings
TO MAKE THE MEAL
Toasted pita bread brushed with olive oil
Tomato, olive, and feta salad
This cold soup is perfect on a hot summer’s day, when the mere thought of heating up your kitchen makes you sweat. Since the soup is quickly prepared in a food processor, you can make it in the morning before heading out, stick it in the refrigerator, and have it ready for your return. If making it just before dinner, stick it in the freezer or in a bowl of ice water in the fridge, and stir frequently to chill quickly.
While the soup is chilling, make the salad. Top wedges of ruby red tomatoes with Kalamata olives and feta cubes. Top with chopped fresh mint or oregano. Drizzle with olive oil and a squeeze of fresh lemon juice.
